  • 1 ½ pounds beef top sirloin, thinly sliced
  • 2 cups water
  • 1 cup rice of choice
  • ⅓ cup white sugar
  • ⅓ cup rice wine vinegar
  • 2 tablespoons frozen orange juice concentrate
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 2 cups oil for frying
  • ¼ cup cornstarch
  • 3 tablespoons grated fresh ginger
  • 1 ½ tablespoons minced garlic
  • 2 teaspoons orange zest
  • 8 broccoli florets, lightly steamed or blanched

  • Dry the beef: Lay the beef in a single layer on a baking sheet lined with paper towels. Place it in the refrigerator to dry for 30 minutes.
  • Cook the rice: Bring water and rice to a boil in a medium saucepan. Reduce the heat to medium-low, cover, and simmer for about 20 minutes until the rice is tender.
  • Prepare the sauce: In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, soy sauce, and salt. Set the mixture aside.
  • Coat the beef: Heat oil in a wok over medium-high heat. Toss the dried beef in cornstarch until evenly coated.
  • Fry the beef: Fry the coated beef in the hot oil in small batches until crispy and golden brown. Set the beef aside and drain the oil from the wok, leaving about 1 tablespoon.
  • Sauté aromatics: Add the ginger, garlic, and orange zest to the remaining oil in the wok and cook briefly until fragrant.
  • Thicken the sauce: Pour the soy sauce mixture into the wok. Bring to a boil and cook for about 5 minutes, or until the sauce is thick and syrupy.
  • Combine: Stir the fried beef back into the wok and cook until it is heated through and well-coated.
  • Serve: Serve the orange beef hot over the steamed rice and garnish with broccoli.

Notes:

If you aren’t a huge fan of ginger, you can use less in your beef in orange sauce. It also freezes well so double the recipe and place in freezer bags or containers and have it for another meal.
