Ingredients for Chicken Cordon Bleu

  • 8 skinless, boneless chicken breasts
  • 8 slices cooked ham
  • 4 slices Swiss cheese, cut into 1 inch pieces
  • 1/4 C Mayo
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • ¼ cup melted butter
  • ½ cup Bread Crumbs

Optional Sauce:

  • 1 (10.75 ounce) can condensed cream of chicken or mushroom soup
  • ½ cup sour cream
  • 1 tsp lemon juice

Preparation

  • Preheat the oven to 400°F (200°C).
  • Lightly grease a 9×13-inch baking dish.

Chicken Rolls

  • Pound the chicken: Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8-inch thickness.
  • Season the filling: Spread some mayo over your chicken. Place a piece of cheese on each ham slice and sprinkle lightly with thyme, salt, and pepper.
  • Roll the ham: Roll up the seasoned ham and cheese jellyroll-style.
  • Assemble the chicken: Roll each chicken breast around the ham and cheese rolls. Tuck in the ends and fasten them with toothpicks.

Coating Your Chicken Cordon Bleu

  • Prepare the coating station: Place melted butter in a small bowl and bread crumbs in a shallow dish or bowl.
  • Coat the chicken: Dip each chicken roll in the butter, then roll in the crumbs, turning to coat thoroughly.
  • Arrange: Place the coated rolls in the prepared baking dish.

Baking and Sauce

  • Bake: Cook in the preheated oven for about 40 minutes, or until the chicken is golden brown and juices run clear.
  • Prepare the sauce: While the chicken is cooking, mix the condensed soup, sour cream, and lemon juice in a small saucepan.
  • Heat the sauce: Heat over low heat, stirring occasionally, until well combined.
  • Serve: Pour the hot sauce over the chicken rolls and enjoy! Add a side salad or favorite vegetables to finish off your dinner.

Notes:

Some people have added a teaspoon of paprika and if you don’t want to make the sauce you can also use Knorr hollandaise sauce mix or no sauce at all for your Chicken Cordon Bleu.
