This easy chicken with stuffing casserole is so easy to make and can be on the table in 30 minutes or less. It freezes well and is perfect to make if you have leftover chicken.

Ingredients for Chicken with Stuffing Casserole

  • 2 cups cooked chicken, shredded (Chicken breast, thighs or Leftover Rotessie chicken works great)
  • 1 box chicken flavored stuffing mix
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 1/2 teaspoon garlic powder Salt and pepper to taste
  • 1 cup shredded mild cheddar or swiss cheese (optional)

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, garlic powder, salt, and pepper.
  • Stir in the entire box of stuffing mix until well combined.
  • Add the mixture to a greased 9×13 inch baking dish.
  • Sprinkle the shredded cheese on top. This is optional but it tastes so good with it. I personally use colby jack cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until heated through and golden on top.
  • Let cool slightly before plating for yourself and your family.
